Unfortunately, the BBC stands for Black Bean Cakes, not the TV channel. Fortunately, they are delicious. Technically, actually they are griddlecakes. From How to Cook Everything Vegetarian. I am addicted to this book!
I made a half recipe. The whole recipe called for one egg so I used a couple of tablespoons of egg substitute rather than waste half of an egg. I also replaced half of the AP flour with whole wheat and used fat-free half n half. They were perfect with salsa(not pictured here):
BBC(based on a recipe by Mark Bittman
one cup cooked black beans
1/2 cup ff half n half
2 Tbsp egg substitute
1 Tbsp melted butter
1/4 cup AP flour
1/4 cup whole wheat flour
salt n pepa to taste:)
mash beans slightly, add liquids then dry ingredients, then cook on a griddle or a frying pan.
Now, to work on getting some REAL BBC!
